Los alimentos listos para el consumo contaminados con la bacteria Listeria monocytogenes, son la principal fuente de brotes infecciosos en el humano. Este microorganismo puede crecer en condiciones de refrigeración y sobrevive formando biofilmes sobre la superficies de utensilios e instalaciones de las industrias alimentarias. El queso elaborado con leche no pasteurizada puede provocar brotes de importancia. Los síntomas de la listeriosis, se manifiestan por un episodio agudo de fiebre, dolores musculares, y algunas veces síntomas gastrointestinales como nauseas y diarreas. En embarazadas es una infección de mayor cuidado.
Es por esto que las industrias alimentarias deben adoptar criterios de seguridad para este microorganismo.
